Capsicum or chilli peppers are group of plants species which produces fruits of various shapes and colour (red, yellow, green, brown, white/vanilla or purple). Capsicums are native to Mexico, North America and northern Latin America. Capsicum species are grown all over the world and consumed in various forms in many traditional dishes in most countries including Mexico, India, Thailand, Korea and Indonesia. Traditionally capsicum species in various forms have been known for their thermogenic properties. It has been used for various digestive disorders such as stomach upset, intestinal gas, stomach pain, diarrhea, and cramps. Capsicum has also been used for conditions of the heart and blood vessels including poor circulation, excessive blood clotting, high cholesterol, and help in the prevention of heart related diseases. Capsicum species contain various bioactives which have numerous pharmaceutical and nutraceutical benefits. Capsaicinoids are a group of compounds unique to Capsicum or chilli peppers. These compounds have pungent sensation which occurs as capsaicin binds to the same group of nociceptors which also leads to the sensation of pain from heat and acid. It is believed that these chemicals are produced by the plant as a defence mechanism against mammalian herbivores and fungi. The chemical structure of capsaicin is shown in Figure 1 it consist of vanillylamine combined with a fatty acid. There are over 10 different types of structures exist, among these the most prominent forms are capsaicin and dihyrocapsaicin, accounting for almost 90% of capsaicinoids responsible for various valuable pharmacological properties.
